These scallops are cold smoked. It was like magic to us. Once they’ve defrosted, they’re ready to eat. If desired, you might sear them for ten seconds on each side. This is a great, simple way to add some spice to the traditional scallop appetizer. They’re also an excellent addition to a seafood platter.
