Slicing them into elegantly arranged pieces of squid for sashimi has been done for you by a very skilled person. Twenty flawless, raw squid slices are on the tray when it arrives. Ika can be eaten fresh or very simply prepared because it has a naturally sweet taste. To bring out the best in it, try adding a squeeze of lime or traditional sudachi with a dash of salt. Before being served over rice for ika nigiri, it is frequently very delicately scored with a sharp knife.
